Lot 16: MARIA ROSALINA CRIOLLO CAÑAR

María Rosalina Criollo Cañar, is a coffee farmer born and raised in the municipality of La Florida Nariño. Maria is married to Jorge Burbano and is the mother of Richard Burbano Criollo. Rosalina is 52 years old and she tells us that from a very young age she helped her mother in the work of processing and harvesting coffee, which was done in a very traditional way and without the adequate infrastructure required by this process.

Today Rosalina continues to be empowered in her work as a Coffee Woman, she has a farm cultivated with coffee in the Rosapamba village, located at 2,000 meters above sea level, called "La Palestina", a Greek name that evokes the fighters, fighters like Rosalina, who year after year, she strives to obtain the best lots of coffee, the sowing and cultivation tasks are carried out by her husband and her son, while she remains with the stage where the best care of each grain is required.

Maria handles different practices, trying to decipher which is the best methodology to obtain the best cups, without a doubt, the one that was put into practice this year 2020 gave the result that Maria bas been waiting for several years. The harvest of the beans of different varieties of coffee, which contributed their best characteristics , with the help of the collectors represented by members of their family, most of them women, practicing the retention of passes. They managed to carry as much grain as possible to the hopper. Pre-fermentation in cherries for 24 hours, pulping, tank fermentation for 1 day, grain separation by weight with the help of water, grain washing with two rinses and 100% sun drying on indoor walkers , for periods of 11 days, they managed to obtain the assessment that every coffee grower seeks to have throughout their career, perhaps leading Rosalina to begin a master's degree in quality.
